I have a spare PowerBook, and it needed a replacement HDD, so I fitted a new IDE HDD and thought it was high-time that I decided to install MorphOS v3.19 from scratch, as I hadn't done a clean, from a blank/new HDD, installation for some time!

EDIT] - What can I say, I must have been over-tired, and obviously not remembering how to use HDConfig correctly, as I have done many times before, so what follows below deserves me to offer an apology to the MOS Dev. Team, including jPV, who added more info lower down that relates to HDConfig that I really don't need . . . now that I have put my mind back in gear !!

Imagine my surprise when I tried to install, manually, not the automatic self-determining MorphOS installation to find that when I tried to format/partition the HDD that there was
no option to format the HDD with a
SFS partition, nor was the
HFS (Hierarchical FileSystem) visible to choose to create the
Boot volume/partition, yet there were some strange formatting options such as
NeXtStep and
OSX and
OSX-B along with a variety of FAT and NTFS options to choose from!

In fact, when I opted to partition the HDD into 3 volumes the process chose FAT-L as the default to format the partitions! What use would
FAT-L be to install either the "Boot" volume or the "System" partition onto!?

I don't know if this current MorphOSBoot iso volume has been revamped over recent releases or just since v3.19, as this is the first top-to-bottom HDD installation that I have done for sometime, but I feel fairly sure that when I last did such an installation there were options in the formatting and partitioning choices to create SFS and HFS volumes, but they are seemingly missing from the options if you want to create a MorphOS setup that does not use the automatic/built-in installation procedure, with the v3.19 iso!
As well as that, I am still bemused as to why the embedded version in the MorphOSBoot iso has Wayfarer set at v5.1 (13.04.2023) when we are now benefitting from the availability of v9.1?

I ended up having to use the automatic installation as I could not find a way, using the v3.19 iso boot CD to create partitions for MorphOS that would allow the HFS "Boot" volume and the "System" volume to be created.

EDIT] - Duh !! Now that I remember how to do it, I was obviously (
NOT) thinking logically at the time I installed MorphOS v3.19!

I then had to retroactively, once the default/semi-automated process had completed successfully and booted to MorphOS, open HDConfig (v5.14) and rename the partitions, including their volume identifiers from DH0 and DH1 to what I wanted them to be named, which is what I wanted to do in the first place, but was unable to do due to the issue that I have mentioned above!
