For having used some NLE software from the past, afaik, there is nothing with GUI for editing video on MorphOS.

Still, nothing is impossible if you're brave enough. You can perfectly use ffmpeg in command line mode and do NLE with it.

Cumbersome? Yes. Can do the job? Yes.

Edit for a more targeted answer at Amiga legacy:
All NLE software on Amiga was tied to the presence of a Zorro card. MovieShop was used with the VlabMotion for example, Broadcaster Elite with its eponymous hardware. And the most famous of the most famous was the Video Toaster from NewTek which were only available in NTSC standard. Nothing of all this gonna work with MorphOS unless maybe if you're using an Amiga4000 + CSPPC.

You can edit videos with Blender.

On my 2 do list is a simple video cutter/editor: An external GUI for mencoder done with Hollywood by using the AVCodec plugin.
I.e. the idea is like that: the "editor" would by done by using Hollywood with AVC doing the actual video output within the program. But the final cutting/joining/rendering would be done by mencoder (the hollywood program would then just start mencoder with the according parameters). But job, family life (pretty stressy since the wife suffers on long Covid for a year now...) and a private research project (long covid related) puts that on hold for the next time.
The program would be pretty limited in it's possibilities though (no effects), although mencoder does offer quite some options. Maybe I'll find some time during the XMAS holidays...
