There's no supplied GUI application that'd show you extraction progress like you want I think. People either use Ambient which allows them to navigate archives as if directories, or extract using commandline tools that have no GUI. For extraction the best bet would be xadunfile (supplied).

By default, MorphOS' xadmaster has a number of plugins:
