I would like all of my windows to view as: List, then All Files.

Where do I set this as default for every window opened?

What you can:

Set "My MorphOS" view to List, All Files, snapshot.
Set each disk to List, All Files, make sure of disk.info presence, snapshot.

This way you browse dirs in one window in lister mode.

Add a context menu entry which opens a new window in lister mode. (internal/x-morphos-globalaction-directory)
