I ended up putting my (non-mac) ATI 4550 card in a second PCI 8x slot on my G5 11,2. I put the Morph CD into the CD drive while OSX was running, shut down and then hooked up the ATI to a second monitor. The old monitor booted to OF so I could pick the CD to boot. Once booting, the second monitor came on with Morph booting up. I ended up disconnecting the OSX HDD and NVIDIA so I can just boot to Morph without tinkering any further.

For now, I have no complaints on the ATI 4550 in the PCI 8X slot. It was a bit of a fiddling to do it this way but I still have an intact OSX install if I ever want to swap back to using the OSX HDD + NVIDIA card.
