Many later games work just fine without UAE. For the other games it's quite okay. AGA + demanding cpu is a bit diffucult.
All in all it's easy to use. I have Ambinet configured to run UAE if I open an adf. Additionally i have set up a nice full UAE system (full 3.9 installtion + this and that). Since a while a JIT for UAE is available, too.

Hitting low level hardware is usually not the way to program on MorphOS, But with c/c++ you are in quite a good position to start programming for MorphOS. Usually there's great support on IRC.

It's long ago since I switched. And I miss nothing from my A1200PPC. Except my Defina with Delfinafx + Audiolabs maybe. All in all it's very mature and useable.
