Yeah, with HDConfig you can change device names, but don't touch anything else if you don't know what you are doing to avoid data loss.
One other option is to assign old device names to new ones. Add assign to your user-startup early enough and you don't have to touch all settings of the programs. Actually, I never config anything by "hard coded" device/volume names anymore. I have couple assigns which I use to configure programs. Then I can change actual partitions or HDs etc and programs and their settings still work. For example anything on system partition can be pointed to SYS: and then I have assigns like Utils: to point my apps drawer where ever it is located in each system etc.
