I find that my Amiga knowledge is quite degraded (forgotten after ten years of PC), so I would like to get my hands on:
An AmigaDOS reference guide (electronic media, I seem to only find printed books).
Some primer that explains the hierarchical structure of the folders in the system partition (like where to install new apps/libs/commands, and how to declare new libs so that MorphOS can use them) I've read an article from obligement.free.fr that gives a brief introduction, but I would like to know more before experimenting on my own (and having to reinstall everything n times).

Any doc/website that covers these subjects is more than welcome (if it is in English, Spanish, French, German or Italian).

One hint: don't touch mossys: which is an assign to sys:morphos. It will be overwritten by the next update (will there be another update?). The right place for third party stuff is sys:.
