G5 2 GHz works fine, but currently only 1,5 GB RAM is supported. It's said to change in 3.10 (to about 1,8 GB max). Of course PowerMac G5 supports 4 or even 8 GB (depends on specific model), but only when working with OSX or Linux.
SATA is supported (two bays for hard disks) but the onboard controller could be picky when it comes to SATA II or III disks. The 3,5" ones often have a jumper to set the "compatibility mode", the 2,5"/SSD ones - don't.
Compatibility problems - make sure you get the proper PowerMac. The "dual/quad core" won't work with current MorphOS version. Many PowerMacs have nVidia gfx cards installed. If you get one then you'd have to change it to a compatible Radeon (and that's a whole story). When it comes to software - I've ecountered very few problems. I remember two games (OpenJK: Jedi Academy and Jedi Outcast) that required a manual change in config file to run.
Oh, and if you decide to buy one - make sure you get it packed well (and I mean WELL) - the postal service is regulairly destroying the fragile parts of the case - especially the "handles".
EDIT: And watch out for the water cooled 2,5 GHz/2,7 GHz ones. They're probably leaking already, so if you decide to get one make sure to rebuild the LCS.
