This is build in for ages and was even available in pre MorphOS 2 ambient versions. Just open "SYS:Prefs/Presets/Deficons". The path may differ as you can change it, which allows you to swap icon set like real themes. To get the path check the miscellaneous section in ambient preferences. There you can change/obtain the default icon path.
There you can define icons with the same naming scheme as available inside Ambient Filetypes GUI.
If you want to add an icon for gif files, just store the icon as "image/gif.info".
The naming strictly follows the filetype naming inside the ambient GUI. If Ambient knows a filetype, then you can define an icon for this specific file type. If now you create a filetype and afterwards you can add an icon. There is no need to real icons unless you require some tooltype settings.
AFAIR you can even create default icons using the ambient GUI, by simply dragging and dropping icons onto the icon inside the filetype editor window.
