For these ones you'd need a Warp3D replacement (at least for now). I know that Wipeout2075 works OK with Wazp3D and Shogo should work too (after some tweaks). Not sure about the others, but I see no reason they shouldn't work too.
As for Wipeout - the "non-2075" (the first part of series) works on MorphOS without any need for Warp3D. You can find the port

A PC graphics card should work OK, but would not show anything until MorphOS kernel starts (so no Apple boot menu and no Open Firmware). You can bypass this somehow if you leave the nVidia in one of the other PCIe slots (Radeon goes to the x16 slot "at the bottom"). In that case when you need Open Firmware you just plug the monitor cable to nVidia and you're ready to go.
