Personally I would make System and Work partitions under 128GB and keep them with SFS, and maybe make one more data partition with SFS, and then maybe create FFS2 or IceFS partition (or why not some alien like EXT2 or so, if only used to dump movies or such there) for the rest of the space. You probably won't even need a bigger partition much in MorphOS use... one idea could also be to leave some empty unused space there if you ever need to make another MorphOS installation for dualboot/backup or something.
