The difference is massive. The 1GB with my Mac mini are eaten up quickly with Odyssey while the 1.5 GB of my Powerbook are enough for many things. Especially the google adwords back end is consuming RAM massively. With 1 GB it's hard to use at all while it's rather okay with 1.5 GB.
Having 1.5 GB RAM instead of 1GB on the G5 is a major enhancement and brings me to the point where I could imagine to switch to a G5, too (if they weren't that bulky and such terrible power hogs....).
