32MB is plenty for the build in 1024x768 even with enhanced display options.
Using the 2nd screen the same way I used the Voodoo3 on the PowerMac (read just FlowStudio on a non enhanced 16bit screen) used very little VRAM even at FullHD.
So I'd guess it would be fully useable in such a use case.
